Rum Pineapple Dessert (Pineapple Foster)

Add this to your summer dessert recipes and your guests will be amazed by your culinary talents! This recipe is so easy and so delicious! We had almost become obsessed with it a couple summers ago, and were having it at least once a week.
I have made it on the grill and on the stove. Both ways are heavenly.
1/2 Cup rum (light or dark)
1/2 Cup packed brown sugar
2 tsp. ground cinnamon (plus extra for dusting)Cooking sprayVanilla ice creamOne cored pineapple cut into 6 or 8 rings (to your preferred thickness)
Step One Mix together rum, brown sugar, and cinnamon in small mixing bowl.
Step Two Lay pineapple rings in a single layer in a long glass dish or and pour the rum mix over them. Soak for at least 15 minutes, flipping the pineapple halfway through.
Step Three Strain remaining rum sauce from glass dish of pineapple, and transfer to a small saucepan. Bring rum sauce to a simmer over medium-high heat, then reduce heat to low and simmer for about 6-8 minutes, or until reduced by half. Set aside. (Next step is done while sauce is simmering)
Step Four While the sauce is simmering, heat a grill pan or saute pan over medium-high heat until hot. Lightly grease the pan with cooking spray. Add pineapple slices in an even layer and cook for 1-2 minutes per side until browned and grill marks appear. Transfer to a serving plates, and set aside.
Step Five Top each pineapple ring with a scoop of ice cream and drizzle with rum sauce.
Optional: Sprinkle with more cinnamon if desired. Serve immediately.
Notes: You may need to sauté pineapples in 2 batches.
