Turkey, Brie, & Cranberry Crostini
This appetizer captures all the classic flavors of Thanksgiving in one elegant, bite-sized package. It’s perfect for using up holiday leftovers or serving as part of your Thanksgiving charcuterie board.
Ingredients
For the crostini
1 Baguette about 12 inches long (day old is great for toasting).
2 Tablespoons olive oil
For the topping
5-6 oz Brie cheese (sliced)
1/2 Cup cranberry sauce (see our super easy cranberry sauce recipe) or whole berry or Jellied, store-bought.
1 Cup cold turkey (thinly sliced)
Optional Garnishes
1/4 Cup pecans or walnuts (toasted and roughly chopped).
A few sprigs of fresh thyme or rosemary for a fragrant festive touch.
1 teaspoon of orange zest (when using plain cranberry sauce).
Instructions

Step 1: Prepare the Crostini
- Preheat Oven: Preheat your oven to 400 degrees
- Slice Bread: Slice the baguette into 1/2 inch thick rounds, cutting on a slight diagonal for a larger surface area.
- Oil and Toast: Arrange the slices on a baking sheet. Lightly brush the tops of the bread slices with olive oil. Bake for 5-7 minutes, or until the edges are golden and the bread is crisp.
- Cool: Remove from the oven and let cool slightly while you gather the toppings.

Step 2: Prepare the Toppings
- Slice Brie: Cut the brie cheese into thin, appropriately sized pieces—one slice for each crostini.

Warm Cranberry (Optional): If your cranberry sauce is very stiff, you can warm it gently in the microwave or on the stovetop for about 30 seconds to make it easier to spread. If adding orange zest, stir it into the cranberry sauce now.

Step 3: Assemble and Melt
- Layer Cheese & Turkey: Place one slice of brie cheese on each toasted crostini, followed by a small, thin layer of turkey.
- Melt Brie: Return the baking sheet to the oven for 2-3 minutes. Watch carefully—you want the brie to be soft and just beginning to melt, not completely running off the crostini.
- Finish Topping: Remove from the oven. Immediately spoon about 1 teaspoon of cranberry sauce on top of the melted brie and turkey.
Step 4: Garnish and Serve
- Garnish: Sprinkle the crostini with chopped pecans or walnuts and a few small leaves of fresh thyme or rosemary.

Serve: These appetizers are best served warm, while the brie is still melted and creamy!

To make this a simple component of your Charcuterie Board Thanksgiving, you can prep ahead:
- Toast the crostini slices up to 2 days in advance and store them in an airtight container at room temperature.
- Slice the brie and store it in the refrigerator.
- Have the turkey ready to go.
On the day of the gathering, simply assemble, melt, and garnish for a fresh, hot appetizer in under 10 minutes!
