A Step by Step Summer Charcuterie Platter

By Michele Parkinson

In reality, summer themed charcuterie boards don't vary much from winter themed boards but the colors and food combinations can significantly impact the appearance of the board and add to the festive look you are going for.

The above charcuterie board combines fresh veggies with crostini, 2 kinds of hummus, and goat cheese for a perfectly balanced board.

The most important thing to remember is that variety is your best friend! This insures everyone on your guest list will find something to enjoy and also creates an aesthetically pleasing food arrangement.

Although technically not typical charcuterie fare, the above fruit platter uses the perfect amount color variation, complimented by cubed Monterey Jack cheese.

The above fruit platter is an example of less is more with only 6 items in total. The fresh fruit is perfectly complimented by the Brie and crackers.

Caprese Kabobs are the perfect snack or appetizer, providing simple elegance in the form of cherry tomatoes, basil leaves, and mozzarella pearls with balsamic vinaigrette.

Summer Charcuterie Step by Step

Step 1: Gather Ingredients and Supplies

For a summer-themed charcuterie board, think fresh, bright flavors and colors.

  • Cheese: Opt for a mix of textures and flavors. Consider fresh mozzarella balls, a creamy goat cheese, and a semi-hard cheese like Havarti or a mild cheddar.
  • Meats: Choose a variety of cured meats. Salami, prosciutto, and soppressata are great options. Turkey & ham can also be great summer options.
  • Fruits: Summer fruits are key! Berries (strawberries, blueberries, raspberries), melon (cantaloupe, watermelon), grapes, and cherries work well.
  • Crackers and Bread: Offer a selection of textures, such as baguette slices, water crackers, and maybe some pretzel crisps.
  • Dips and Spreads: A light and refreshing dip like hummus or a fruit spread can add another dimension. Honey is always a nice touch.
  • Olives and Pickles: Add some briny elements with marinated olives and cornichons.
  • Herbs for Garnish: Fresh mint, basil, or rosemary can add visual appeal and a hint of aroma.
  • The Board: You'll need an oval-shaped charcuterie board made of cherry hardwood.
  • Small Bowls and Knives: For dips, olives, and serving.

Step 2: Arrange the Anchors

Start by placing your larger items on the board. These "anchors" will help guide the placement of the smaller elements.

  • Position the cheese wedges or blocks strategically around the board, leaving space between them.
  • Place any small bowls you'll be using for dips, olives, or other items. Think about visual balance.

Step 3: Add the Meats

Next, arrange the cured meats. There are several ways to do this:

  • Folded: Fold large slices of prosciutto or salami into ribbons or rosettes for an elegant look.
  • Clustered: Create small piles or clusters of the different meats.
  • Interspersed: Drape slices of meat between other items.

Try to create some movement and visual interest with how you place the meats.

Step 4: Incorporate the Fruits

Now it's time to add the colorful summer fruits.

  • Fill in the larger spaces around the cheese and meats with clusters of berries, melon wedges, or grapes.
  • Cut larger fruits like watermelon or cantaloupe into bite-sized pieces for easy snacking.
  • Don't be afraid to let the vibrant colors of the fruit pop!

Step 5: Add Crackers and Bread

Arrange your selection of crackers and bread around the board, filling in some of the remaining spaces.

  • You can create neat rows or fan them out for a more casual look.
  • Consider placing different types of crackers near items they would pair well with (e.g., crusty bread near the soft cheese).

Step 6: Fill in the Gaps with Smaller Items

Use olives, pickles, nuts (if desired, being mindful of allergies), and small pieces of remaining fruit to fill in any empty spaces on the board.

  • This will make the board look abundant and visually appealing.

Step 7: Garnish and Serve

Finally, garnish your summer-themed charcuterie board with fresh herbs like mint, basil, or rosemary. This adds a pop of color and a fresh aroma. Place small serving knives for the cheeses and any spoons needed for dips. Enjoy your beautiful and delicious creation!
