On a recent Sunday we found ourselves at the point of needing to restock the fridge and pantry. We could have gone out to eat but I was enjoying the moment of just staying in. Ron offered to make eggs and toast for me but I decided to see what we had available for a frittata or something similar.

Ron calls me "MacGyver of the kitchen"
Because of my ability to create a meal from very limited ingredients, Ron likes to call me "MacGyver of the kitchen". I will admit, it seems to be when I come up with some really great dishes. I think creativity can really be inspired with limited resources.

This crust is one of my favorites and I make several other meals with it. It worked well with this dish because it fit my 12 inch cast iron pan perfectly. There are 2 in a box, making it a pretty reasonable price.

Required Cooking Tools

A cast iron pan is not mandatory but you have to admit it looks pretty awesome. You could use a glass baking dish or even a cake pan.

A mixer of any kind.
Chopping board and knife.
Serving spatula.

A few of your favorite foodie friends.
Serves 6 (or 4 very hungry people)
INGREDIENTS
8 to 10 eggs (I used 8 bc that was what I had. There is room for at least 2 to 4 more.
1/2 cup of ½ & ½ or heavy cream. (add 1/8 cup for every two eggs added).
Meat Cooked of choice. Sausage, bacon, ham, or any combo. We used sausage (about 1 pound).
30 oz container of baby bellas or any mushrooms or not if you aren’t a mushroom fan.
¾ cup monteray jack or cheese of choice (Parmesan is another great option).
2 Tablespoons-ish oil of choice (I used avocado).
1½ cup chopped fresh spinach
STEPS
Brush pan with oil, coating the sides and bottom with a basting brush or something to cover it well.
Pre-Heat oven to 425 degrees, preheat oiled pan (without pizza) in the oven at the same time. Once oven is heated add pizza to hot pan (I sprinkled garlic herb seasoning on the top but that’s optional)
Cook pizza crust for 5 min.
While crust is cooking, mix eggs & cream well. I used my stand mixer and let it get nice and fluffy on medium to high speed. Once mixed stir in the remaining ingredients by hand until well blended. After pizza has cooked for the 5 min. remove from oven and flip the crust in the pan. It will be rigid and easy to turn with a pair of tongs.
Turn oven down to 400 degrees. Pour in mixture into hot pan and bake for approximately 25 minutes or until it is done in the center.
Cool for 5 minutes (we were kinda impatient and didn’t wait that long. It stayed pretty well intact anyway).
